Keto Blueberry Cheesecake Bites

Ingredients
- 1 cup cream cheese, softened
- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
- 1/4 cup fresh blueberries
- 1/4 cup almond flour
- 1 tbsp coconut oil
Instructions
- In a bowl, mix almond flour and melted coconut oil to form a crust. Press into mini silicone muffin molds.
- In another bowl, blend cream cheese, erythritol, and vanilla until smooth.
- Spoon cream cheese mixture over crust and top with blueberries.
- Freeze for at least 2 hours until set. Pop out and enjoy straight from the freezer!
