Zucchini Lasagna Roll-Ups

Ingredients

  • 2 large zucchinis, sliced lengthwise into thin strips
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp Italian seasoning
  • 1 cup low-carb marinara sauce
  • Salt & pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Lightly salt zucchini slices and let them sit for 10 minutes. Pat dry.
  • In a bowl, combine ricotta, egg, Parmesan, Italian seasoning, salt, and pepper.
  • Spread ricotta mixture on each zucchini slice and roll up.
  • Place in a baking dish with marinara sauce at the bottom. Top with mozzarella.
  • Bake for 25–30 minutes until bubbly and golden.
