Zucchini Lasagna Roll-Ups
A low-carb twist on a classic family favorite! These roll-ups are cheesy, hearty, and keto-approved.

Ingredients
- 2 large zucchinis, sliced lengthwise into thin strips
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp Italian seasoning
- 1 cup low-carb marinara sauce
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly salt zucchini slices and let them sit for 10 minutes. Pat dry.
- In a bowl, combine ricotta, egg, Parmesan, Italian seasoning, salt, and pepper.
- Spread ricotta mixture on each zucchini slice and roll up.
- Place in a baking dish with marinara sauce at the bottom. Top with mozzarella.
- Bake for 25–30 minutes until bubbly and golden.

Use a mandoline slicer for even, thin zucchini strips. This makes rolling and baking more consistent!
